Vitamin E is a fat-soluble vitamin i.e. it is stored in adipose tissue and we do not rinse it out as water-soluble vitamins with our daily urine. Vitamin E consists of various so-called tocopherols and is one of our most important antioxidants that helps protect the body from oxidative stress. The fat cover of cells (membranes) is protected from free radicals such as oxygen molecules that could otherwise attack and break them down. Good sources of vitamin E are nuts, avocados and seeds as well as vegetable oils. Often, vitamin E is used as a preservative in fatty acids to prevent them from going rancid.
